GOODFELLAS SAUSAGE AND PEPPERS

The scene with Paul Cicero ( Paul Sorvino) and his crew enjoying this old country classic outside is a slice of my past minus the Mob. Summer nights had as much of this on the barbecue or the stove as the venerable hamburger and hot dog. The sausage can be grilled outside or if you have a Blackstone type grill- the whole dish can be done on the grill. Simple but perfect for the summer paired with a salad. I like to do the basic ingredients in shifts and combine at the end. I use a good sauté pan/skillet.

Ingredients

  • 2 lbs Italian sausage hot, sweet or a combination

  • 2 small onions halved and sliced thin

  • I green pepper sliced in strips

  • 1 red pepper prepared the same

  • 1 yellow pepper prepared the same

  • 6 cloves of garlic sliced

  • Italian seasoning

  • Sea salt

  • Olive oil

  • The best Italian bread you can find – also optional

Preparation:

  1. Par boil the sausage briefly to remove excess fat- this step is up to you

  2. Put some olive oil in to coat the pan not too much

  3. In a skillet or on the blackstone flat top sear the peppers until soft but don’t burn. I use tongs and move them around. Season with a little salt and Italian seasoning

  4. Remove the peppers and it is the onion’s turn to soften and lightly brown in more oil if needed but not too much you want the fresh color, season with a little salt and Italian seasoning

  5. When the onions are half way done put the sliced garlic in do not burn

  6. When this is done remove from the pan and place all on a serving platter

  7. The sausage is grilled outside or done in the pan the par boiling speeds this up and makes for a leaner dish

  8. When browned place on top of the vegetables in the platter

  9. On the grill or under the broiler toast hero sized pieces to make a sub or just have the sausage and vegetables

  10. Butter on the bread and rub a garlic clove for flavor before toasting adds some punch

This is great with a salad of your choice and is a nice change from the usual grill fare. Cold beer is a must. Enjoy
